METHOD
1 Heat 3tbsp olive oil in a large frying pan. Add a chopped onion, a chopped stick of celery and a crushed clove of garlic and cook gently for 3-4 min to soften.
2 Stir in 700g turkey mince, turn up the heat and cook until browned and crumbly – about 4 – 5 min.
3 Stir in 1tbsp chilli powder (or less to your taste), a 400g can drained kidney beans, a 400g can chopped tomatoes, 2tbsp tomato puree, a crumbled chicken stock cube and 300ml water.
4 Bring to a boil, then turn down and simmer for 25 min.
5 Serve with rice.
